Coconut Pickle
ingredients
1. coconut- one(sliced into small pieces and fried in coconut oil)
2. bitter guard- one(- do-)
3. garlic- 25 gm
4. pickle masala powder- 25 gm
5. chilly powder- 1 tsp
6. green chilli- 5 nos
7. coconut oil - 150 gm
8. vinegar- 100 gm
9. salt, mustard and curry leaves - as required
method
Splutter mustard in coconut oil and saute garlic, sliced green chilli, pickle masala powder, chilly powder and curry leaves well. Remove from fire. Add coconut kernal pieces and bitter guard pieces and salt. Mix well. After half an hour add vinegar. Pack in sterilized bottles.
